In a separate pot, cook the sweet potatoes, then drain and set aside. In the same pot, cook the black beans until heated through, then set aside. In a frying pan, cook the onion and garlic until softened, then add the thyme and cook for a further minute.

To serve, divide the rice between four bowls, then top with the callaloo, sweet potatoes, black beans, and cooked onion and garlic mixture. Add the crispy jerk tofu to the top of each bowl, then season with salt and pepper.

Heat the olive oil in a frying pan over medium-high heat, then add the onion and garlic and cook until softened. Add the curry powder, cumin, coriander, salt, and pepper, and cook for a further minute. Add the diced potatoes and chickpeas, then cover and cook until the potatoes are soft, stirring occasionally.

Roll out the roti dough on a floured surface, then cut it into eight equal pieces. Take one piece of dough and roll it out into a circle. Add a spoonful of the chickpea and potato mixture to the center of the circle, then fold the edges of the dough up and around the filling, pinching them together at the top to seal. Repeat this process with the remaining dough and filling.

Heat a frying pan over high heat, then add one roti at a time and cook until golden brown on both sides.
