– 2 eggs, lightly beaten
– ¾ cup all-purpose flour

– 2 Tablespoons butter
– Oil for frying

  • Transfer cooked chicken to a plate lined with paper towels.
  • Reduce the heat under the skillet to low and add the butter, orange marmalade, lime juice, and salt & pepper. Stir to combine and then add the fried chicken tenders back to the pan.
  • Gently toss them in the sauce until they’re fully coated.
  • Serve hot over a bed of greens, if desired.

Instructions:

  • In a bowl, mix together all of the spices, salt & pepper, and olive oil.
  • Toss chicken tenders in the spice mixture until all of them are coated.
  • Transfer tenders to the refrigerator to marinate for 30 minutes.
  • Meanwhile, make the Lemon Garlic Yogurt Sauce by mixing together all the sauce ingredients in a bowl and setting aside.
  • When ready to cook, preheat the grill to medium heat and lightly oil the grill grates.
  • Place chicken tenders on the preheated grill and cook for 3-4 minutes per side, or until cooked through and no longer pink in the center.
