  • 1 cup of raisins
  • 2 oranges
  • 2 lemons
  • 1 oz. of yeast nutrient
  • 1/2 tsp. of tartaric acid
  • 3 campden tablets, crushed
  • 2 tsp. of pectic enzyme
  • 3/4 tsp. of yeast energizer
  • 1 package of wine or champagne yeast

Instructions

1. Pick the dandelion flowers in the morning of the day you are going to make your wine. Make sure the weather is overcast and that the flowers have not been exposed to the sun for a long time. Rinse the flowers off and remove the green calyces from the stems.

2. Place the dandelion flowers in a 2-3 gallon pot. Pour the water into the pot and let the mixture set undisturbed for 24 hours.

3. After 24 hours, strain the dandelion liquid into another pot through a sterilized jelly bag or cheesecloth.

4. Add the sugar, raisins, oranges, and lemons to the pot. Heat to boiling, stirring constantly.

5. Boil for approximately 10 minutes, stirring constantly. Remove from heat.

6. Stir in the yeast nutrient, tartaric acid, campden tablets, pectic enzyme, and yeast energizer.

7. Let the mixture cool to room temperature.

8. Re-hydrate the yeast for 15 minutes in lukewarm water (90-100° F/32-38° C).

9. Add the yeast mixture to the cooled dandelion liquid. Stir daily for 1 week.

10. Strain the dandelion liquid into a clean bucket and let it sit for another week.

11. Rack the wine into a sanitized carboy, add campden tablets, and let the wine sit for 2-3 months.

12. Rack the wine again, let it sit for another 2-3 months, and then it’s ready to drink!
