To make this eggplant garlic sauce dish, follow these easy steps:

  1. Cut the Chinese eggplants lengthwise into wedges, about 1-inch thick, and put them into a bowl.
  2. Pour in 1 tablespoon of vegetable oil and salt, and toss to coat the eggplant wedges evenly.
  3. Heat 1 tablespoon of oil in a large, non-stick frying pan over medium heat. Add the eggplant wedges and fry for about 2-3 minutes until golden brown.
