HOMEMADE ANZAC BISCUITS RECIPE

A classic Anzac biscuit is one of the most well-known and easy to make treats, so it’s the perfect cookie to start with. The only hard part is resisting the temptation to eat them all straight away!

Ingredients:

  • 1 cup flour
  • 1 1/4 cup rolled oats
  • 1 1/4 cup shredded coconut
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 2/3 cup butter
  • 3 tablespoons golden syrup
  • 1 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water

Instructions:

  1. Preheat the oven to 150°C and line two baking trays with parchment paper.
  2. In a large bowl, mix together the flour, oats, coconut, sugar and salt.
  3. Melt the butter and golden syrup in a small saucepan over low heat until completely melted and combined.
  4. In a small bowl, mix together the bicarbonate of soda and boiling water until fully dissolved.
  5. Add the melted butter and golden syrup to the dry ingredients and the bicarbonate of soda and water mixture, then mix until everything is evenly combined.
  6. Take heaped tablespoonfuls of the mixture and roll into balls, then place them 2 cm apart on the baking trays.
  7. Flatten each biscuit with a fork and bake in the oven for 15-20 minutes, or until golden brown.
  8. Allow to cool and enjoy with a cup of tea!

Ingredients:

  • 1 cup butter
  • 1/2 cup sugar
  • 2 1/4 cups all-purpose flour
  • 1/3 cup cornstarch
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 200g milk chocolate, melted

Instructions:

  1. Preheat the oven to 180°C and line two baking trays with parchment paper.
  2. In a medium bowl, cream the butter and the sugar together until light and creamy.
  3. Add the flour and the cornstarch, then mix together until the ingredients are combined, then add the milk, vanilla extract and mix again.
  4. Place the mixture onto a lightly floured surface and knead until it forms a dough.
  5. Roll the dough into balls, 2 cm in diameter, and place on the baking trays 2 cm apart.
  6. Bake for 10-15 minutes, or until golden brown.
  7. Allow to cool slightly, then spread a teaspoon of melted chocolate over each biscuit.
  8. Allow the chocolate to set before serving.
