  • 1 tablespoon extra-virgin olive oil
  • 1.5 pounds boneless skinless chicken breasts
  • 1 onion, diced
  • 3 celery stalks, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 pinch of crushed red pepper flakes
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • Salt and pepper, to taste
  • Chopped fresh parsley, to garnish

Instructions:

  1. Pour the olive oil into the Instant Pot and press the Sauté button. Add the chicken and onion, and cook until the chicken is just cooked through, about 5 minutes. Then, add the celery, carrots, garlic, oregano, basil, thyme, smoked paprika, chicken broth, bay leaf and red pepper flakes.
  2. Secure the lid and turn the steam release valve to sealing. Press the Manual/Pressure Cook button and set the timer for five minutes at high pressure.
  3. When done cooking, quick-release the pressure by turning the pressure release valve to venting or turns off the heat.
  4. Stir in the heavy cream and cornstarch, then season with salt and pepper, to taste. Simmer until the soup has thickened, about 5 minutes.
  5. Serve the soup hot and garnish with chopped fresh parsley, if desired.
