Ingredients

  • 1 pound pasta (I used mini shells)
  • 3 cups small cut broccoli florets
  • 1 can kidney beans, drained and rinsed
  • 1 bell pepper, chopped
  • 3 green onions, chopped
  • ¼ cup extra virgin olive oil
  • 2-tablespoons apple cider vinegar
  • 1-tablespoon honey
  • 2-tablespoons spicy brown mustard
  • Sea salt and black pepper to taste.

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook for 7-8 minutes, stirring occasionally.
  2. Add the broccoli to the boiling water with the pasta and cook for another 3-4 minutes.
  3. Strain the pasta and broccoli and rinse with cool water to stop the cooking process.
  4. Combine the cooked pasta and broccoli with the beans, bell pepper and green onion in a large bowl.
  5. Combine the olive oil, vinegar, honey, mustard, salt and pepper in a small bowl and whisk until emulsified.
  6. Pour the dressing over the pasta and vegetables and mix until everything is well coated with the dressing.
  7. Chill the pasta salad for at least 30 minutes before serving.
