MINI EGG CHOCOLATE CHIP COOKIES

After months of perfecting this recipe, I’m finally ready to share with you all my take of the classic Chocolate Chip Cookies. For this, I’m using Mini Eggs added on top of the cookies to give it some extra flavor. I’m also using a unique way to prepare the batter: adding some waffle cookies to the mix.

Mini Eggs Chocolate Chip Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter, softened
  • 1 cup granulated white sugar
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped waffle cookies
  • 1 cup Mini Eggs, chopped

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

In the bowl of a stand mixer, beat the butter until creamy and light. Add in the sugars, and mix until well combined. Add in the eggs, one at a time, mix until fully incorporated. Add in the vanilla, and mix until creamy. Slowly add in the dry ingredients, and mix until well combined. Add in the chocolate chips, waffle cookies and mini eggs, and mix until well combined.

Scoop cookie dough onto the baking sheet, and bake for 10-14 minutes, or until golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, and then transfer to a wire rack to cool completely.

MINI EGG CHOCOLATE CHIP COOKIES

  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup butter, softened
  • ¾ cup light brown sugar, packed

  • 1½ cups miniature semisweet chocolate chips
  • 1 cup crushed waffle cookies (I used store-bought waffle cookies)

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In the bowl of a stand mixer, beat the butter until creamy and light. Add in the sugars, and mix until well combined. Add in the egg and vanilla extract, and mix until well combined. Slowly add in the dry ingredients, and mix until well combined. Add in the chocolate chips and waffle cookies, and mix until well combined.

Scoop cookie dough onto the baking sheet, and bake for 10-12 minutes, or until golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, and then transfer to a wire rack to cool completely.
