Nishime~Simmered Chicken and Vegetables~

Ingredients:

-1 pound of chicken

-4 cups of water

-1 tablespoon of soy sauce

-1 tablespoon sake or dry sherry

-1 tablespoon sugar

-1/4 teaspoon of salt

-8 small carrots, peeled and cut into small pieces

-1/2 medium-size daikon radish, peeled and cut into small pieces

-1/2 cup of cut and sliced bamboo shoots

-1/2 cup of cut and sliced shiitake mushrooms, fresh or dried

-1/3 cup of cut and sliced konnyaku (konjac)

Instructions:

1. Rinse the chicken under cold water and pat dry with paper towels.

2. In a large pot, bring 4 cups of water to a boil.

3. Add the chicken to the pot and simmer for 5 minutes.

4. Remove the chicken from the pot and set it aside.

5. Add the carrots, daikon radish, bamboo shoots, mushrooms, and konnyaku to the pot.

6. Return the chicken to the pot.

7. Add the soy sauce, sake or dry sherry, sugar, and salt to the pot.

8. Bring the pot to a simmer and cook for 30 minutes or until the vegetables are tender and the chicken is cooked through.

9. Remove the pot from the heat and let it cool for a few minutes.

10.Serve the nishime in bowls with the chicken and vegetables, and enjoy!
