  • 3 tablespoons (30 g) all-purpose flour
  • 3 cups (720 ml) chicken broth
  • 1/4 cup (60 ml) milk
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • Salt and pepper, to taste
  • 1-2 handfuls of fresh parsley leaves, chopped
  • 2 large chicken breasts, cooked and diced
  • 1 cup frozen peas
  • 1 sheet of puff pastry, cut into 8 pieces to fit pie dishes

Instructions

  1. Preheat oven to 425°F (215°C).
  2. In a large skillet, warm oil over medium heat. Add onion, garlic, carrots and celery, and cook until softened and fragrant, about 5 minutes.
  3. Add mushrooms and cook until lightly browned, about 5 minutes more. Sprinkle with flour and stir to combine. Cook for 2 minutes.
  4. Gradually stir in chicken broth, milk, garlic powder and onion powder, and warm until mixture begins to thicken.
  5. Season with salt and pepper, to taste, and stir in parsley, chicken, and peas.
  6. Divide filling evenly between 8 small, individual pie dishes.
  7. Place 1 puff pastry piece over each dish and pinch the edges to create a seal.
  8. Bake in preheated oven for 20 minutes, or until pastry is golden brown.
