  • 1 (15-ounce) can corn, drained and rinsed
  • 1 (8-ounce) package seitan, cut into 1-inch pieces
  • Sea salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add flour, cumin, oregano, tomato paste, chili powder and smoked paprika and stir until combined. Add vegetable broth, tomatoes, black beans, corn and seitan. Season with salt and pepper and bring to a simmer.
  3. Reduce heat to low and simmer for 20 minutes, until the stew has thickened and the flavors have developed.
  4. Serve topped with fresh cilantro.

  • 6 large pitas, halved

Instructions:

  1. Preheat oven to 375°F.
  2. In a large bowl, combine the jasmine rice, oats, vital wheat gluten, onion powder, garlic powder, cumin, coriander, smoked paprika and sea salt. Stir well.
  3. Add the vegetable broth and 1 tablespoon olive oil and mix with your hands until a dough forms.
  4. Shape the dough into 6 equal-sized pieces and place on a baking sheet lined with parchment paper.
  5. Bake for 40 minutes.
  6. Meanwhile, heat the remaining oil in a large sauté pan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  7. Add the cooked seitan and lemon juice and stir to combine.
  8. To assemble the gyros, fill each pita with 1/6 of the seitan mixture. Top with desired amount of tzatziki sauce.

Tzatziki Sauce:

  • 1/2 cup plain Greek yogurt
  • 1 cucumber, peeled and grated
  • 1 clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon extra-virgin olive oil
  • Sea salt and black pepper to taste

Instructions:

  1. In a medium bowl, combine the yogurt, cucumber, garlic, lemon juice and olive oil.
  2. Season with salt and pepper to taste.
  3. Cover and refrigerate until ready to use.
